CHINESE FOOD PRACTICES & CULTURE:
Chinese preferred cooking method is stir-frying. The chinese cut meat and vegetables into smaller pieces and they stir-fry them quickly. Steaming is another popular cooking method with the Chinese. Fish & chicken, and many "dian xin" items are often steamed. Chinese's staple food is rice. Noodles are also important to their diet. They would normally eat rice with mixed dishes like vegetables, chicken, fish etc.
DINING ETIQUETTE:
- When taking food from the serving dish, do not be choosy and do not put back what you have taken. - Do not lick your chopsticks - Always lift the rice bowl up to your mouth when eating - Never stick the chopsticks upright in a bowl of rice. It is a sign that the rice is an offering for the dead - Greet your elders before eating
KEY INGREDIENTS:
Flavourings like sesame oil, dark and light soya sauce, and oyster sauce are used in chinese cookings. Garlic and ginger are also commonly used. Typical ingredients such as chinese mushrooms, spring onions, water chestnuts, bamboo shoots and wood's ears are used.

The early Chinese immigrants in Singapore came from China. They came to Singapore by chinese junks. And they work as coolies or laborers here. In the early days Chinese spoke different dialects: Hokkien, Teochew, Cantonese and Hakka. Different dialect groups have their own style of cooking, thus making chinese cooking in Singapore unique & has lots of variety.
